I wanted to start off the New Year with some healthy recipes! A lot of people make the decision to eat better, eat healthy, eat cleaner, what have you, when starting the New Year.
I know I am! I would like to eat healthier foods, less sugar, and work out consistently! The problem is...I have a huge sweet tooth.
So what could I eat that would satisfy that sweet craving, but can still be healthy for me?
So, I started working on this vegan brownie recipe. I was inspired by some vegan bloggers I follow, and wanted to come up with something they would love!
It took several attempts at the recipe, some tweaking, and finally, I came to this delicious end result!
I gave them to some friends without telling them first, and they had no clue. If if you aren't vegan (like myself), you will still love this recipe! These are such easy vegan brownies to make!
This is a vegan avocado brownie recipe, and the avocado replaces the egg essentially. I also use avocado oil to help get the texture I wanted. Without the oil, the vegan brownies were gummy. With the oil, it was the brownie texture I was looking for.
So without further ado...
For these vegan avocado brownies, everything gets put in one bowl and mixed. It doesn't get much easier than that!
You start with your avocado. I used half of an avocado. You can follow these instructions on how to cut an avocado, if you need it.
Mash the avocado a little with a fork first, then you can put the rest of the ingredients into the bowl.
For the mocha part of these vegan brownies, I used instant espresso powder. The coffee flavor is very subtle, so you can add more if you want, or you can replace the water for brewed coffee. Make sure the coffee is completely cooled before adding it to the brownie mix.
Once all the ingredients are mixed together, pour into a prepared pan. By prepared, I mean to either spray it with cooking spray, or put parchment paper in the pan.
Bake, cool, and enjoy!!
These brownies are so delicious, you won't even know they are vegan!
For a richer coffee flavor, you can use brewed coffee (cooled down) instead of water, and increase the amount of espresso powder.
