Triple Berry Pie

Fact: eating pie makes you happier. Well, at least that’s true for me! Pie is a great dessert anytime. For us, we usually only get pie for Thanksgiving and Christmas. But that needs to change! You can eat pie any day you want!

 

So now that we established that pie is for whenever we want, let’s make a Triple Berry Pie.

 

How to Make Pie Crust

 

I love using homemade pie crust. I think it tastes so much better than store bought crust. However, if I’m in a rush, store bought crust will get the job done.

 

Combine the flour, salt, butter (cut the butter into small cubes), sugar, and cinnamon in a bowl. Use a pastry blender, or your hands, and “cut” the butter into the flour. Basically, you are squishing the butter in the flour to make the butter chunks smaller and smaller. Do this until the butter chunks are a tad smaller than the size of a walnut.

 

Add the cold water and mix to combine. It will start to form a dough. Once it’s combined, split the dough into two pieces, and wrap in saran wrap and put it in the fridge. Refrigerate it for 4 hours, or you can leave it overnight like I did.

 

You can also make the dough far in advance, just put it in the freezer, and take it out the day before you need to use it.

 

When you are ready to bake the pie, roll out one of the doughs and put it in your pie pan. Poke holes into the bottom of the pie crust.

 

How to Make the Triple Berry Filling

 

First, I want to say that you do NOT have to use a triple berry filling. You can do any fruit filling you want. Want to throw in more fruit? Do it. Want less fruit? Do it. Whatever floats your boat!

 

Put your frozen berries into a pot and thaw them on a medium-low heat on the stove.

 

Strain the berries and SAVE THE JUICE. Put the strainer on top of a measuring cup or a bowl so you can catch all of those juices.

 

Set the berries aside and measure out ¾ cup of the reserved juices. If you don’t have enough berry juice, make up the difference by adding water.

 

Put the juice, sugar, lemon juice, and salt into the same pot you were using, and bring it to a boil. Stir it occasionally as it comes up to a boil.

 

In a small bowl, combine the cornstarch and 2 tablespoons of water and stir it to combine. Slowly add this to the boiling juice while constantly stirring the mixture. Let this all come back to a boil, and let it boil for 1 minute.

 

Fold the berries into your thickened juice mixture.

 

Pour the berries into your prepared pie crust. You can put a top crust on, a lattice crust, or no crust. That is completely up to you!

 

Bake at 375 degrees F for about 40-50 minutes. You want the crust to be golden brown.

 

Let it cool and enjoy! You can top it with ice cream or whipped cream if you want some extra decadence!

Ingredients

Pie Crust

  • 3/4 pounds all purpose flour
  • 1/2 teaspoon salt
  • 1/2 pound butter, cold and cut into cubes
  • 1/2 cup water, cold
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Berry Filling

  • 1.5 pounds frozen triple berry mix
  • 3/4 cup reserved berry juice/water
  • 1/2 cup sugar
  • 1/4 teaspoon lemon juice
  • pinch salt
  • 2 Tablespoons cornstarch
  • 2 Tablespoons water

Instructions

Pie Crust

  4. After the crust has chilled, roll it out and put it into your pie plate. Poke holes into the bottom of the crust, and crimp the edges how you like.

Berry Filling

  1. Thaw the frozen berry mix by putting it in a pot on medium-low heat
  2. Strain the berries, and SAVE THE JUICES.
  3. Set the berries aside, and measure out 3/4 cup of the reserved juices. If you do not have enough berry juice, make up the difference by adding water.
  4. Put the juice, sugar, lemon juice, and salt into the same pot, and bring it to a boil. Stir it occasionally as it comes to a boil.
  5. Combine the 2 tablespoons water and cornstarch in a bowl and stir to combine. Slowly add to the boiling juice and stir until it comes back to a boil. Allow it to boil for 1 minute while stirring.
  6. Add the berries and stir the mixture together.
  7. Pour into your prepared pie crust. Top with a lattice crust, or a solid crust, or no crust!
  8. Bake at 375 degrees F for 40-50 minutes, or until the crust is golden brown.
  9. Cool and enjoy!
