Sugar Cookie Fruit Pizza

I love eating fruit and using fruit in desserts in the summer. The fruit tastes so much better and is more satisfying in season!

 

I’ve always admired fruit pizzas. I think they are such a genius dessert, and they are perfect for family gatherings. Everyone would enjoy them, even the kids! My son, who is 2.5 yearsold, loves fruit. I had some extra cut up fruit after making this and he ate it all!

 

So, I did my take on a fruit pizza, and made a sugar cookie “crust”and a cream cheese frosting to go with it. Let’s get into how to make this sugar cookie fruit pizza!

 

How to Make the Sugar Cookie Crust

 

Take softened butter, shortening, and the sugar, and mix it together until it looks pale and fluffy.

 

Add the egg and vanilla and mix it to combine.

 

Last, add all the dry ingredients: the flour, salt, baking powder, and cream of tartar. Mix it until it combines and forms a dough.

 

Wrap the dough in saran wrap and let it refrigerate for at least 2 hours. I made mine the day before and let it refrigerate overnight.

 

After it is refrigerated, roll it out to your desired thickness.I kept mine on the thin side, much thinner than I would do if it were a regular sugar cookie.

 

I then used a dinner plate and cut around the plate to cut a circle. Transfer it to your sheet tray or stoneware and bake it at 350 degreesF for about 15-18 minutes, or until the edges of the cookie start to turn golden brown.

 

Let the cookie completely cool before moving on.

 

How to Make the Cream Cheese Frosting

 

The sauce of our fruit pizza is a cream cheese frosting.

 

Combine the softened cream cheese, powder sugar, vanilla,and milk. Mix it until it is smooth and well combined.

 

Assembling the Fruit Pizza

 

Spread the cream cheese frosting onto the cookie. Assemble cut up fruit in any kind of pattern you’d like! I went with a rainbow-like pattern, and used strawberries, oranges, kiwi, blueberries, blackberries, and raspberries.

Once all the fruit is on, make a glaze with the apricot jelly or apricot preserves and honey. This will give the fruit a beautiful shine, help them last longer, and makes the whole pizza overall look better. Brush it on all the fruit.

Ingredients

Sugar Cookie Crust

  • 1/4 cup butter, softened
  • 1/4 cup shortening
  • 1 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 3/4 cups flour
  • 1/8 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon cream of tartar

Cream Cheese Frosting

  • 1/2 pound cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1 Tablespoon milk

Fruit Glaze

  • 1 Tablespoon apricot jelly or apricot preserves
  • 2 Tablespoons honey

Fruit

Whatever fruit you want! Pictured I have:

  • Strawberries
  • Clementines
  • Kiwi
  • Blueberries
  • Raspberries
  • Blackberries
  • Mint for decoration

Instructions

Sugar Cookie Crust

  1. Mix the butter, shortening, and sugar together until it is well combined, lightened in color, and fluffy.
  2. Add the eggs and vanilla.
  3. Add all the dry ingredients- flour, salt, abking powder, and cream of tartar. Mix until is just combines.
  4. Wrap the dough in saran wrap and let it refrigerate for at least 2 hours.
  5. After the dough is chilled, roll it out to your desired thickness. Mine was much thinner than a typical sugar cookie would be. Use a dinner plate to cut a large circle with the dough. Transfer the dough to a cookie sheet or stoneware.
  6. Bake at 350 degrees F for 15-18 minutes, or until the edge of the cookie turns golden brown.
  7. Let it cool completely.

Cream Cheese Frosting

  1. Add the cream cheese, powder sugar, vanilla, and milk together and mix it until it is very smooth.

Fruit Glaze

  1. Combine the apricot jelly/preserves and honey, stir until well combined. If it is too thick for brushing over fruit, add a little bit of water to thin it down.

Assembling the Fruit Pizza

  1. Spread the cream cheese frosting on the cookie.
  2. Assemble the fruit on top, anyway you would like. Make sure your fruit is washed and cut as needed.
  3. Brush the fruit glaze over all the fruit.
  4. Cut it up and serve! It is best served immediately, otherwise store it in the fridge.
