Strawberry Pie

In my opinion, strawberries are the best fruit on Earth. You can make so many different desserts with them! They also scream SUMMERTIME! Here in Michigan, we welcome summer with wide open arms after another brutal winter.

Strawberry Pie is such an easy dessert to make, but it's sure to impress your friends! It's nothing but strawberries, and it doesn't get much better than that. If you are looking for the best strawberry pie recipe, then look no further! Try this one out, and I think you will love it.

How to Make Strawberry Pie

There's only a few steps to making this strawberry pie. The hardest part of the recipe, in my opinion, is blind baking the pie crust. Since the strawberry pie filling doesn't get baked, you need to bake the pie crust first.

How to Blind Bake the Pie Crust for Strawberry Pie

With either premade or homemade pie crust, roll it out to fit into your pie tin. Make sure you roll it large enough so that some of the crust hangs over the edge of the pan.

You then can cut the excess pie crust, and fold it in and crimp it. There are so many ways to decorate the pie crust. I chose to make a braid out of the crust and put it on the edge. If you do something fancy like that, you can use milk as your glue to help the dough stick to each other.

Next, cut a circle out of parchment paper to fit on the pie crust. Then, take a large sheet of aluminum foil and put it on top of that parchment paper, and allow it to come up the sides. You will fill that foil sheet with sugar. This is to act as a weight so that the pie crust doesn't puff up while it is baking.

Bake the pie crust according to the recipe below.

How to Make the Strawberry Pie Filling

First, wash, clean, and slice the strawberries and set them aside.

Combine half of the water with the sugar in a pot, then combine the rest of the water with the cornstarch. Stir it to get rid of any lumps of cornstarch, then add it to the pot with the sugar water.

Let that pot boil until the mixture thickens, then add the strawberry jello and whisk it together.

Place the strawberries in the cooled off, baked pie crust. Pour the strawberry jello mixture on top of the strawberries.

Put the pie in the refrigerator until it has set up.

This strawberry pie is really good with some whipped cream on top!

Ingredients

  • 4 cups fresh strawberries, sliced
  • 2 cups water
  • 1 cup sugar
  • 4 tbsp cornstarch
  • 2 packages strawberry jello
  • 1 pie crust

Instructions

  1. Put the pie crust into your pie tin. If there's any extra crust hanging over the edge of the pie tin, either cut it off, or fold it under. You can crimp the edge, or however you like to finish the edge of the pie.
  2. Poke holes in the bottom with a fork. Lay some aluminum foil in the crust, then pour sugar in the foil. This is your weight, so that the pie crust stays flat while it is baking.
  3. Brush some milk on the edge of the pie (as a milk wash)
  4. Bake the crust at 350°F for 30 minutes. Take out the crust, remove the aluminum foil with the sugar, and put the crust back in the over. Bake for another 10-15 minutes, until the entire crust is golden brown. Allow the crust to cool completely.
  5. Wash, clean, and slice your strawberries, and set aside.
  6. Combine half the water and all of the sugar in a pot. Mix the cornstarch and the rest of the water together until there are no clumps of cornstarch, then add that into the pot as well.
  7. Boil it until it becomes thick, then whisk in the jello.
  8. Place the strawberries in the crust, then pour the jello liquid on top.
  9. Refrigerate the pie until the jello has set up.
  10. Cut it up, and enjoy! It is wonderful with whipped cream!
