Pumpkin Cake

It's pumpkin season, and what better way to celebrate it than with a cake! This pumpkin cake is delicious, with the perfect amount of pumpkin.

This is also super easy to make. It requires only one bowl, and you really can't mess it up. It doesn't get much better than that!

How to Make Pumpkin Cake

To start, you will melt your butter, then mix it together with the sugar and brown sugar. Mix it until the sugar is dissolved, which may take a couple of minutes.

Next, add your eggs one at a time and mix them in well.

After the eggs, add the pumpkin and all of the dry ingredients. You don't need to alternate, just dump it all in and mix it together well! When it has mostly mixed together, add the water and vanilla.

Mix it well so there are no lumps and it is a smooth batter. Pour into your prepared cake pans or cupcake pans and bake according to the recipe card below!

How Can I Decorate My Cake

There are a few filling and frosting options you can go with. In these pictures, I did a caramel filling and a cinnamon cream cheese frosting (and let me tell you, this was AMAZING).

You can do cream cheese frosting for the filling as well, or you can stick with buttercream.

The best decorated cakes are the simplest. I did a swipe on the side and top, and drizzled some caramel over the edge. Decorate your cake with some flowers and it will look perfect!

Ingredients

  • 1 cup butter, melted
  • 1 cup sugar
  • 1 cup brown sugar
  • 15 ounce can pumpkin
  • 4 eggs
  • 2 1/4 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin spice
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1/2 cup water

Instructions

  1. Mix the melted butter, sugar, and brown sugar together until it is well combined and the sugars are completely dissolved in the butter.
  2. Add the eggs and mix until it is all well combined.
  3. Add the pumpkin and all of the dry ingredients- the flour, baking powder and soda, salt, and spice. Mix it all together until it is combined.
  4. Add the vanilla and water and mix together.
  5. Pour into your prepared cake pans or scoop into cupcake liners.
  6. Bake at 350 degrees F:
    For 6" cake, bake for 30-35 minutes
    For 8" cake, bake for 45-50 minutes
    For cupcakes, bake for 12-15 minutes

This recipe will yield 4- 6" cakes, 2- 8" cakes, and around 4 dozen cupcakes.
