Peanut Butter Cookies

I don't know anyone who doesn't like peanut butter cookies. They are such a classic treat! When you have that perfect peanut butter cookie, it has a crisp exterior, and a chewy, melt in your mouth interior.

Don't mind my drool while I'm writing this!

How to Make Homemade Peanut Butter Cookies

First, take the sugar, brown sugar, peanut butter, butter, and shortening, and put it in a large mixing bowl. Beat the ingredients together until they are well combined. The mixture will lighten in color, and it will look fluffy.

Next, add the egg and vanilla. Mix it on a slower speed, and let them combine into the mixture.

Last, add all of the dry ingredients. Mix this slowly so you don't have flour spraying up into your face.

Unlike some of my other cookie recipes, you do not need to chill the dough. It actually gets pretty crumbly if you refrigerate it, so leave it at room temperature.

Scoop the cookie dough onto a prepared cookie sheet. Flatten each ball of dough slightly. Then, press a fork into the dough vertically and horizontally (a cross shape). Sprinkle some sugar on top- I like to use Sugar in the Raw, aka turbinado sugar.

Ingredients

  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup peanut butter
  • ¼ cup shortening
  • ¼ cup butter softened
  • 1 egg
  • ¼ tsp vanilla
  • 1 ¼ cup flour
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt

Instructions

  1. Combine the sugar, brown sugar, peanut butter, shortening, and butter in a bowl. Mix them together until it is smooth, lighter in color, and looks fluffy.
  2. Add the egg and vanilla, mix to combine.
  3. Add the flour, baking soda, baking powder, and salt, and mix to combine.
  4. Using a cookie scoop, scoop the dough onto a cookie sheet. Bake at 350°F for 8-10 minutes.
  5. Let the cookies cool, then enjoy!
