Fluffernutter Cookies

When my brother was younger, his favorite sandwich was a Fluffernutter sandwich. I was inspired by that sandwich and made them into the most amazing cookies ever!

What in the world is a Fluffernutter?

A fluffernutter sandwich was white bread, peanut butter, and marshmallow fluff. I know it sounds a little odd, but is is delicious. I recall my brother having them almost every day for one summer!

While reminiscing on the good ol' days, I decided to make a cookie dedicated to those fluffernutters. After a few trials and errors, I found the perfect combination of peanut butter and marshmallow.

The peanut butter cookie itself is my classic recipe. It is soft and chewy, with just the right amount of crisp on the edge.  You'll have to eat one to understand how amazing this cookie is.

The marshmallow adds another texture element, and it so good! If you eat it warm, it is so gooey!

How to Make Fluffernutter Cookies

This is going to be pretty simple to make. You take the sugars, peanut butter, butter, shortening, egg, and vanilla, and beat it together until it's light and fluffy.

Then, you will take all the dry ingredients, and mix it until it has just blended together.

Scoop the cookie dough onto a cookie sheet, and flatten slightly by hand. Put them in the over for 3 minutes.

When the 3 minutes it up, place a marshmallow on each cookie. Use the marshmallow to squish the cookie down a little flatter. Then bake for another 5 minutes.

Place the sheet on a rack to cool, and transfer the cookies off the sheet when they are cooled.

When they first come out of the oven, the marshmallows will be big. As they cool, they will flatten out, like shown in the picture below. They do this on their own, no need to try to flatten the marshmallows yourself.

Then you are ready to enjoy the yumminess that is the Fluffernutter Cookie!

Ingredients

  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup peanut butter
  • ¼ cup shortening
  • ¼ cup butter
  • 1 egg
  • 1 ¼ cup flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla
  • 18 regular size marshmallows

Instructions

  1. Heat your oven to 375°F.
  2. Beat the sugar, brown sugar, peanut butter, shortening, butter, and egg together until smooth and fluffy.
  3. Add all the dry ingredients, mix until it just comes together.
  4. Scoop onto a cookie sheet, and flatten slightly. Put in the oven for 3 minutes.
  5. When the 3 minutes is up, put a marshmallow on top of the cookie, and use the marshmallow to flatten the cookie further. Bake for another 5 minutes.
  6. Take them out and cool on a cooling rack.
