There’s no better spice than cinnamon in my opinion. Its flavor gives me a mental image of a warm hug! I decided to incorporate one ofmy favorite breakfast foods, cinnamon rolls, into a cookie. I give you, a Cinnamon Roll Sugar Cookie!
These cookies are packed with cinnamon flavor and toppedwith a cinnamon cream cheese frosting.
Like with most cookies, we will start with the butter, shortening, and sugar getting mixed together. You want to beat these ingredients together until it lightens in color and becomes fluffy.
Next, add the egg and vanilla extract at a low-medium speed. Let these get fully incorporated into the mixture.
Add all the dry ingredients next: the flour, baking powder,cream of tartar, and cinnamon. As it is mixing, add the milk, and let the dough mix fully to incorporate all the ingredients.
Scoop the dough out on a piece of plastic wrap and wrap it up and put it in the fridge for a couple hours to chill.
Once the dough has chilled, roll it out on a floured surface to about 1/2”-3/4” thickness. Use a round cookie cutter and cut out circlesfrom the dough. Do this over and over until you don’t have enough dough to rollout and cut another circle.
Place all your circle cookie doughs on a sheet tray and put in the freezer for 15 minutes.
After they have chilled in the freezer, place them on a different sheet tray and bake at 350 degrees F for 7-9 minutes. Let them cool completely before frosting them.
The cream cheese frosting is easy to make. Make sure your cream cheese is soft at room temperature!
Mix all the ingredients together: cream cheese, powder sugar, vanilla, milk, and cinnamon.
When the cookies are cooled, you can use a knife or a back of a spoon and spread the frosting on the cookie. If you’d like, sprinkle some more cinnamon on top!
These soft cinnamon roll sugar cookies will make you think you are actually eating a cinnamon roll! Packed with cinnamon flavor and topped with cream cheese frosting, these will be your new favorite cookie.
