No bake oatmeal cookies are a favorite for my family. My mom made them all the time as we grew up, then when I met my now husband, I learned that his mom also made them all the time, and still does!
My mother in law would even give my husband and his brothers a bowl of the no bake cookies while they were warm. That was such a treat!!
My favorite version of no bake cookies is chocolate and peanut butter. My mother in law would also make just peanut butter no bake cookies, which are just as delicious!
These are very easy no bake cookies. It doesn't take long to make them, and they are set up and ready to eat within the hour! Or you can eat it out of the bowl warm ;)
First, you take the butter, sugar, cocoa, milk, and vanilla and put it all in a pot. Heat it on medium heat until it starts boiling. Let it boil for about 1 minute, while constantly stirring it.
Take the pot off the heat and stir in the peanut butter. Let the peanut butter melt completely, then add the quick cook oats. Stir it to combine all the oats with the mixture.
Use a cookie scoop or spoon, and scoop out the no bake oatmeal cookies onto wax paper to cool and set up. Give them about an hour to completely set up, then you can eat them!
As I mentioned earlier, you can make peanut butter no bakes, just take the cocoa out of the recipe.
I have seen some recipes use coconut instead of quick oats. This would make for a great keto option, and using a sugar substitute as well.
If you want to make this vegan, substitute the milk for a milk substitute like oat milk or almond milk, and use your favorite vegan butter substitute.
