Blueberry Muffins

I want you to close your eyes, and imagine it's Saturday morning. You are still in bed, wrapped up in your blankets. The sun is streaming into the window, and you hear the birds chirping good morning. You take in a deep breath, and smell it. One of the most delicious smells in the world.

Fresh, homemade, blueberry muffins.

My mom would make these for us once in a while, and it still is one of my favorite breakfast foods.

Muffins are so easy to make. And they are basically less fancy cupcakes that you can eat for breakfast. Win win!

I added a cinnamon streusel topping to my blueberry muffins. I love that extra crunch it gives it. You can of course, not put the topping on. It would be a mistake though. Your tastebuds would appreciate that topping!

So get up a little earlier this weekend, and make these for breakfast! You won't be sorry.

Blueberry Muffins

Ingredients

Blueberry Muffins
  • ½ cup butter softened
  • 1 ¼ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • ½ tsp lemon juice
  • 2 cups AP flour
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ cup milk
  • 2 cups fresh blueberries
Streusel Topping
  • 3 tbsp sugar
  • 3 tbsp brown sugar
  • 4 tbsp flour
  • 4 tbsp butter cold, cut into chunks
  • 2 tsp cinnamon

Instructions

Blueberry Muffins
  1. Preheat your oven to 400°F. Line cupcake pans with liners.
  2. Cream the butter and sugar together.
  3. Add the eggs, vanilla, and lemon juice.
  4. Sift the dry ingredients together, and add half to the mixture.
  5. Add the milk.
  6. Add the rest of the dry ingredients.
  7. Fold in the blueberries.
  8. Scoop into the cupcake liners.
Streusel Topping
  1. Combine all the ingredients together into a food processor. Pulse until it forms a crumble texture. If you don't have a food processor, cut the butter into the dry ingredients using a pastry blender or a fork, or even your hands!
  2. Put the topping on each muffin top.
  3. Bake for about 20 minutes. Cool, and enjoy!
