For me, Fall starts September 1st. I don't care that it's still 90 degrees outside, its pumpkin and apple season!
I wanted to kick off my apple recipes with a muffin. I love having muffins for breakfast, and you guys, this Apple Spice Muffin is over the top delicious. It tastes great, it's light and fluffy, and it has a delicious cinnamon streusel on top.
Need I say more?
Start by combining the melted butter and brown sugar. Mix it together until it is well combined and the brown sugar is dissolved into the butter.
Add the eggs and vanilla.
Add all of the dry ingredients, applesauce, and milk.
Peel your apples, then cut them into a small dice. Fold in the apples into the batter.
Line the muffin pan in every other cup, and fill each baking cup to the top with muffin batter. Lining every other cup will allow more air flow through the muffins while they are baking and give you a nice, tall muffin top. Set this aside while you make the streusel.
In a small bowl, combine all the streusel ingredients until it becomes a crumble texture.
Sprinkle on top of each muffin.
Bake at 425 degrees F for 5 minutes, then lower the temperature to 375 degrees F for 15 minutes.
Allow them to cool, and enjoy!
