Vegan Avocado Mocha Brownies

Ingredients

  • 2 cups flour
  • 2 cups pure cane sugar
  • ¾ cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • ½ cup avocado oil
  • ½ avocado, smashed
  • ½ cup almond milk, unsweetened
  • ½ cup water or brewed coffee
  • 1 tsp vanilla extract
  • 2 tbsp espresso powder

Instructions

  1. Mash the avocado first, then add all of the ingredients into one bowl. Mix until it is well combined.
  2. Line your cake pan with parchment paper, then pour the brownie batter into it. Bake at 350°F for about 45-50 minutes. You can stick a toothpick into the center of the brownies, and if it comes out clean, they are done baking.
  3. Allow them to cool before removing from the pan and serving.

Notes

For a richer coffee flavor, you can use brewed coffee (cooled down) instead of water, and increase the amount of espresso powder.
