Pecan Praline Cookie
Pecan Praline cookies are not a popular cookie recipe, but easily one of my favorite. They are melt in your mouth delicious!

Ingredients
- 12 oz sugar
- 12 oz brown sugar
- 6 oz heavy cream
- 3 oz milk
- 3 oz butter
- 12 oz pecans, chopped and toasted
- 1 tsp salt
- 1/2 tsp vanilla
Instructions
- Put the pecans on a sheet pan and put them in a 400 degree F oven for 10-15 minutes for them to toast.
- Combine the sugar, brown sugar, heavy cream, milk, and butter in a saucepan. Cook to 230 degrees F while stirring constantly
- Add the pecans and salt, cook this to 237 degrees F, while stirring constantly.
- Remove from the heat and add the vanilla.
- Let the pot sit, don't stir it, it needs to sit undisturbed until it has cooled to 212 degree F.
- Use a wooden spoon and stir vigorously until the mixture looks creamy, which will take about 45 seconds.
- Use a cookie scoop to scoop the praline mixture onto parchment paper. If the mixture gets to thick, warm it briefly on the stove top while stirring.
- Allow the cookies to cool and set up before serving. Store in an airtight container.
