Cookie Dough Brownies

Rich brownies topped with egg-less Cookie Dough and a Chocolate Ganache glaze makes up this decadent treat!

Ingredients

Brownies
  • 2 cup sugar
  • 1 ¾ cup flour
  • ½ cup cocoa powder
  • 1 tsp salt
  • ½ tsp baking soda
  • 4 eggs
  • 1 cup vegetable oil
  • ¼ cup water
  • 1 tsp vanilla
  • 8 oz chocolate chips or bakers chocolate bar
  • 1 cup heavy cream
Cookie Dough
  • 1 cup butter softened
  • 1 cup brown sugar
  • ½ cup sugar
  • 4 tbsp heavy cream or milk
  • 2 tsp vanilla
  • 2 cups flour
  • 1 tsp salt
  • chocolate chips amount is to your discretion

Instructions

Brownies
  1. Grease or line with parchment paper a 10x10 cake pan OR a 9x13 cake pan. Preheat the over to 350 F.
  2. Combine all of the ingredients except for the 8 oz chocolate chips and 1 cup heavy cream. Mix well and set aside.
  3. Heat the heavy cream over the stove or in the microwave until it boils. Pour over the 8 oz chocolate chips. Let it sit for 1 minute, then stir until it is smooth. Set aside, this is your ganache.
  4. Pour half of the brownie batter into a 10x10 cake pan, or you can use a 9x13 pan as well. Layer 1/4 of the ganache on top of the brownie batter, and use a butter knife to swirl it around. Pour the rest of the brownie batter on top, then another 1/4 of the ganache on top of that, and again swirl it. You will still have half of the ganache left, we are saving that for the very end.
  5. Bake for 1 hour- 1 hour 15 minutes, or until the edge of the brownie has pulled away from the pan. Set aside to cool.
Cookie Dough
  1. To make the cookie dough, cream the butter, brown sugar, and sugar together.
  2. Slowly add the heavy cream (or you can use milk) and add the vanilla.
  3. Add the flour and salt and mix until well combined.
  4. Add as many chocolate chips as you would like!

Building the Brownies
  1. When the brownies have cooled, spread the cookie dough on top of the brownies.
  2. Heat up the other half of the ganache saved from earlier until it is a runny consistency. Pour on top of the cookie dough, and spread it evenly on top. Sprinkle some chocolate chips and salt on top, if desired.
  3. Put the brownie into the fridge so the ganache can set up.
  4. Cut and enjoy!
