Banana Cupcakes with Chocolate Cream Cheese Frosting

Ingredients

Banana Cake
  • 3 eggs
  • ¾ cup vegetable oil
  • 2 tsp vanilla
  • 1 cup buttermilk see notes for substitute
  • 2 bananas mashed
  • 3 ¼ cup Swan's Down Cake Flour
  • 2 cups sugar
  • 1 ½ tsp baking soda
  • ¾ tsp salt
  • 1 tsp cinnamon
Chocolate Cream Cheese Frosting
  • 3 pounds cream cheese softened
  • 3 tbsp butter softened
  • 3 cups powder sugar
  • 1 ½ cups cocoa powder

Instructions

Banana Cake
  1. Mix the eggs, vegetable oil, vanilla, buttermilk, and bananas together until they are combined.
  2. Add all of the dry ingredients, mix until well combined.
  3. Scoop into a prepared cupcake pan lined with cupcake liners, and bake at 350° for about 15-18 minutes.
  4. Let the cupcakes cool for a couple minutes, then take them out of the pan to cool completely.
Chocolate Cream Cheese Frosting
  1. Mix the cream cheese and butter together until it is very smooth.
  2. SLOWLY add the powder sugar and cocoa powder. Mix until smooth.
  3. Frost your cupcakes, and enjoy! Store in the fridge if not being eaten right away.
Notes

If you don't have buttermilk, use 1 cup of regular milk and 1 tablespoon of white vinegar.
